Macaroons or Macarons?

Happy Macaroon Day….or, is that Macaron Day?

Although many use the spellings interchangeably, most pastry experts define them as two very distinct cookies.

The macaroon, is a bit crunchy on the outside, with a sweet chewy, dense center.  They are often made of egg whites, coconut and/or almonds, and sweetened condensed milk.  Preferably, they are dipped or drizzled with chocolate, as in these Dark Chocolate Coconut Almond Macaroons by A Dash of Sass.

In contrast, the macaron, is a round sandwich cookie made of egg whites, sugar, and almond flour.  It can be filled with a variety of fillings, such as ganache, jam, or buttercream, offering infinite flavor combinations.
